Heat large skillet pan on med heat. Add diced potatoes, sage, and mushrooms to pan to let them sweat and cook a bit. Whisk eggs, tumeric, and rice milk together in a bowl. get other ingredients ready.Drizzle oil over pan or spray pan with cooking spray - and make sure that the entire skillet is coveredPour egg mixture onto skillet and tilt pan to make egg mixture lay flat like a pancake. Let cook 1 minute or less (depending on heat of the pan)Add ingredients on 1/2 of the egg mixture and let sit for 1 minute.Flip other side ontop of the mixture and let sit until insides are firm and cheese is melted.
