This is a great breakfast and is low enough in calories that if you're extra hungry you could eat the whole thing yourself and still not be "bad". I have substituted yellow summer squash or zuchinni for the broccoli and it's still amazingly delicious... cuts down on the cooking time too if veggies are fresh (though frozen broccoli cooks faster than fresh) Enjoy!

Approx 1 cup chopped frozen broccoli
1 cup chopped fresh tomato
1/4 cup chopped green bell pepper
1 oz shredded cheese (low fat)
3 large eggs, scrambled

How Do I Make Egg and Veggie Scramble?

Here is how you make Egg and Veggie Scramble:

Stir fry all vegetables at the same time with 1/2 cup water (no oil or fat necessary) until broccoli is cooked to desired firmness. Add egg and preferred seasonings (I use garlic and onion powder, a little salt and pepper). Once egg is mostly cooked (I turn in sections to cook evenly), spread out over bottom of pan with spatula and add cheese. Cook a couple more minutes until cheese is melted (I mix and flip a bit to get cheese evenly distributed). Makes two servings of approximately 1 1/2 cups each... very filling.
