Here is how you make Mini Veggie Frittatas:

Preheat oven to 375 degrees1. In a medium pan, sautee onions and bell pepper till tender (approximately 3-5 minutes). Add in spinach and mix in with veggies until wilted. Remove from heat and set aside.2. In a medium bowl, whisk egg whites and whole eggs. Add milk and whisk till well combined. Add seasonings (such as a pinch of salt and pepper) to egg mixture, if desired.3. Divide egg mixture evenly in a 12 cup muffin tin, approximately 1/3-1/2 way full in each cup.4.
