Preheat oven to 350F, grease a 9" pan.Whisk together the chia seed and hot water, let stand 10 minutes.Whisk together the flours, cocoa, baking powder, salt and coffee in a bowl.Combine the whole milk and egg nog in a saucepot or microwave safe bowl, bring to just below a simmer (it should be almost too hot to touch).Add the hot mixture to the dry ingredients, followed by the sugar, oil, honey, vanilla and chia seed mixture.
