Plain grits work better but you can use quick cooking, just make sure you follow the cooking instructions. Once cooked, add 1/2 stick of butter or margarine, cheese (get creative here), garlic and stir. In a separate container, mix egg and milk together, then temper with some of the grits. Pour this into the grits once tempered, and stir. Pour mixture into a greased pie plate or square glass dish and bake at 375 F until the top starts to brown. Remove from oven and let cool for ten minutes (this is very important or it will be like eating lava). Serves six.Note: If you can get stone ground grits from an organic type grocer, use these as they cook up really creamy, and you won't have to add so much butter or margarine.
