Mix the appplesauce and sugars with a mixer until creamy and the sugars have dissolved. Then add the egg, molasses and spices. SLOWLY add the flours and baking soda mixing as you go. Let the dough chill in the refridgerator at least an hour or overnight. Cut the dough in quarters and roll on a well floured surface and floured rolling pin. It will be sticky! Roll out to a thickness of about 1/8 -1/4 inch thickness. Cut out shapes and place on either a lined or lightly sprayed baking sheet and bake at 350 degrees for 10-12 minutes.
