Lightly grease a 13x9 inch baking sheet with butter.2. Combine sugar, corn syrup and water in a large pot (3 quart), mixing well.3. Heat over medium-high heat until 280o F (using a candy/deep-fry thermometer). Stir mixture often (using a silicon spatula works well, as the mixture won?t stick to it), being sure not to let mixture burn.4. Gradually add the peanuts (if peanuts are raw, maintain the 280o bowl, while stirring to keep nuts from burning).5. Increase the temperature of the mixture to 300o F. Remove from heat.6. Add baking soda and salt, mixing well (do not let boil over!).7. Pour mixture into pan and spread as thin as possible.8. Let stand to cool.
