Pick over and soak beans in water for 6 hours or overnight. Drain and rinse.In large soup pot place beef ribs and cover with beans, add onion (whole) and mustard and water to cover. Bring to boil.Add sugar and (salt and pepper to taste) stir well, reduce heat, cover loosly and simmer 1.5 hours.Remove meat from bones, chop meat and readd.
