6 cloves garlic, pressed
4 Tbsp ginger root, grated
4 Tbsp apple cider vinegar
4 green onions, thinly sliced
1/2 cup cilantro, chopped
1 cup low sodium chicken broth
4 Tbsp all natural creamy peanut butter (no added oils)
1/2 cup Hoisin sauce
1/2 cup low sodium soy sauce
4 Tbsp honey

Here is how you make Chicken Satay:

Combine all the ingredients except chicken in a bowl, mix well. Divide in half: reserve one half in the refrigerator until needed for a dipping sauce, the other half place in a large container and add the chicken chunks (make sure there is enough marinade to completely cover the chicken.Marinate overnight.Soak the skewers for an hour before cooking. Add the chicken on the skewers (toss marinade chicken was soaking in) and cook on the grill until done. Heat the reserved marinade to dip the chicken in.
