1 (10-ounce) package of frozen chopped Spinach, thawed and drained
4 Slices Bacon
2 Tbsp Extra Virgin Olive oil
2 Tbsp Lemon Juice

This recipe makes 4 servings, but is easily reduced for less. You can do a lot of wonderful, low fat substitutions, as well as trading in fresh spinach for frozen (just cook and drain is first). 1.)
