Place water in a pot the size that will accomodate the amount of potatoes and bring to a boil. While waiting for the water to boil, you can cut the potatoes into quarters. You can also mince the olives and mince the cilantro (if you are not a fan of cilantro, you can use parsley.)Place potatoes into the boiing pot and turn down heat to medium high and cook for 5-8 minutes being sure not to over cook the potatoes leaving them a little firm. Check with a fork at about 4 minutes into cooking.Drain the potatoes in a collander and place them back in the pot or serving dish.
