1.25 cups basmati rice uncooked
1.25 cups chicken broth
2 15 ounce cans black beans, rinsed and drained
1 poblano chile
2 tsp chili powder
1 tsp cumin
1 lime
cilantro
1/4 tsp salt
1/4 tsp pepper
1 small onion
3 tbs butter divided
jalapenos and mango for topping

Here is how you make Coconut LIme and Black Bean Rice:

Preheat oven to 350Spread in even layer 1 cup coconut on cookie sheet and toast coconut, approx 10 minutes, remove and coolIn saucepan add 1 cup water, chicken broth and 2 tbs butter in 2 q pan, bring to boil, add salt, pepper then add rice and cook 20 mins or until doneIn saucepan melt remaining 1 tbsp butter, add diced onion and poblano, over med high heat cook for 5 minutes, add beans and spices and 3/4 cup water, cooking for approximately 15 minuteszest lime, then juice in separate bowlwhen rice is done, add lime zest, lime juice and coconut, stir to mix, add cilantro to taste (recipe calls for 1/2 cup but I love cilantro so I generally add the entire bunch), once rice is mixed put bean mixture on top and serve, I added jalapenos and diced mago before servingNumber of Servings: 6Recipe submitted by SparkPeople user LORIPIERSON1.
