2.25 cup Rice flour, brown
1 cup Cornstarch

How Do I Make Gluten Free Almond Biscotti?

Here is how you make Gluten Free Almond Biscotti:

In large mixing bowl, combine oil, sugar, eggs and almond extract. Beat on high for 1 minute.Add rice flour and beat on low until combined. Add cornstarch and baking powder and beat on low until combined. Increase speed to high and beat for 1 minute, or until dough pulls away from side of bowl.Divide dough into two sections. On one parchment lined cookie sheet, with wet hands, form dough into rounded block the length of cookie sheet and about 6 inches wide. Pat down to 3/4 inch high.On second parchment lined cookie sheet, shape dough as above.Bake in oven for 25 - 30 minutes until small cracks appear and dough is lightly browned. Remove from oven and let cool 10 - 15 minutes. Transfer dough on parchment paper to countertop.With serrated bread knife, slice dough into 1/2 wide slices. Lay slices on parchment lined cookie sheet, flat sides down. Bake 10 minutes. Remove from oven, flip cookies over and bake for an additional 5 - 10 minutes until cookies are light brown. Remove from oven to cool. You will need to do this numerous times to double bake all cookies.Eat as is, or drizzle with melted chocolate.
