Preheat oven to 350. Prepare baking sheet with parchment or silpat.In a small bowl, whisk together flours, sesame seeds, anise seeds, cinnamon, baking powder, and salt. In a standing mixer bowl, wisk eggs, sugar, honey, orange zest on medium for about 4 minutes, until thick and pale in color. With mixer running, add oil in a steady stream. Wisk until incorporated and smooth. Change to a paddle attachment. Add flour mixture and almonds. Mix on low for about 10 seconds, just enough to have the dough come together. Cover with plastic wrap and cool in the refrigerator for at least an hour.Transfer dough onto floured surface. Wet your hands and separate the dough into two logs, each about 15 inches long x 3 wide. Place logs onto baking sheet, providing ample room between logs. Logs will spread in the oven. Bake for about 30 minutes. Logs should be golden and firm.Remove logs and allow to cool for about 30 mins. Reduce oven to 275. Transfer each log to a cutting board and using a serrated knife cut into 1/2 inch batons. Return to the baking sheet allowing space between slices. Bake until golden and dry, about 30-40 mins. Transfer onto wire rack and allow to cool.
