1 cp. Erythritol - do not substitute
2 tbsp Water
1 cp. Almonds - finely chopped
1/2 cp. Lindt Excellence 85% Cocoa Extra Dark Chocolate or equivalent


How Do I Make Almond Toffee?

Here is how you make Almond Toffee:

Combine the butter, erythritol and water in a large microwave safe bowl. Microwave on high for 3 minutes or until the erythritol is completely dissolved. Take bowl out of the microwave and stir to make sure that the erythritol is dissolved. Microwave for 5 more minutes. Add a half-cup of almonds and stir well. Microwave on high for 7 more minutes or until the hard crack stage (290? to 300? a candy thermometer). Be sure to watch time carefully! Don't let the butter or almonds burn! Immediately pour the mixture onto a foil lined, buttered baking sheet. Spread with buttered spatula, as needed. Set the toffee aside to cool to room temperature, about 30 minutes. Before it gets too cool, spread chocolate on top and when it begins to melt, spread to cover top. Sprinkle remaining almonds over the chocolate. Break into bite sized pieces.
