My dietitian said that as long as I am doing as well as I have been doing that I could have 4-6 ounces of apple cider occasionally but no more than once a day. This is a nice recipe to split with a friend on a cold, rainy fall day. If you have problems finding these ingredients in your local grocery store, check out www.SplendidLife.com to purchase them online.Makes two servings. About 6 ounces each. Slice the apple from side to side in 1/4 inch slices. Carefully cut out the core of two of the prettiest slices. This is easily done with a large thimble and it makes a perfectly circular hole.2. Take two clear glass mugs (footed Irish coffee mugs make this look especially festive) and fill with very hot water. Let sit to allow the warmth to penetrate the glass. It will help to keep your drink warmer longer.3. Mix all ingredients except the cinnamon sticks in a 2-cup Pyrex glass measuring cup. 4. Heat in the microwave until warm and apple slices begin to soften but still maintain their shape. If your microwave has a "Beverage" sensor button, this works great. Otherwise, watch carefully so that it does not begin to boil and overflow the measuring cup. 5. Empty the hot water from the glass mugs.6. Divide cider mixture evenly into the two glass mugs.7. Put a cinnamon stick through the hole in the center of each apple slice, positioning the apple so it rests diagonally on the stick just barely submerged in each mug. Or, use the cinnamon stick to prop up the apple slice on the side of the glass mug as shown in the picture.Makes two servings.
