Spray a 12-muffin pan with non-stick spray (I like the high-heat Pam) or use muffin papers. Mix all ingredients (except biscuits) together in bowl, stirring until apples are well-coated. Feel free to adjust the amount of seasonings to taste. Flatten each biscuit to about 1/4 inch thick (this will also make them larger than they came out of the can). You will have approx. 4 biscuits left over.Place 1 flattened biscuit over each muffin opening, allow them to lay flat over the opening. Place a spoonful of the apple mixture on each biscuit. Use the spoon to push everything down into the muffin compartment. Using your fingers, pinch the dough closed as much as possible, covering the apples as completely as possible, on each crumpet. Sprinkle with cinnamon or Splenda brown sugar if desired. Bake according to biscuit package directions. Allow to cool enough to handle before serving.
