* 1 tbsp cinnamon

Crust:

* 3 large eggs
* 3 tbsp coconut flour, sifted
* 1 tbsp coconut milk beverage
* 3/4 tsp baking powder
* 3 tbsp erythritol
* 4-6 drops of Stevia ( NuNaturals)
* 2 tsp vanilla extract

"Apples"1. In a medium pot, bring 1/2 c water to boil, add diced zucchini, lemon juice, erythritol, stevia and cinnamon.2. Boil for about 10 minutes, until soft.3. Mix cornstarch with remaining 1/2 c of water until dissolved.4. Add cornstarch mixture to zucchini, mix, and simmer for 1-2 minutes. Stir in coconut oil.5. Place the cooked zucchini in a glass baking dish ( I used 12x9.5)Crust:1. With a hand mixer, beat eggs, milk, erythritol, stevia, vanilla extract for 3 minutes2. Add sifted coconut flour and baking powder. Beat for one more minute until combined.3. Let the dough sit for 5 minutes to thicken.4. Pour the dough over the zucchini and bake for 20 minutes at 350 F.
