Here is how you make Rumbamel's version of MSU_ALLYN's Apple Pancakes:

--Core and chop your apples into small bite sized pieces. Put into a microwave safe bowl and cover. Cook on high and cook for 2 minutes. Add your cinnamon and nutmeg and then stir. Cook another 2 minutes and stir again covered. Set aside.--Meanwhile, put your oats in a blender and blend until a fine powder. I forgot this the first time. Then add your egg whites and milk and blend again.--Separate your apples into 4 ramekins and then add 1/2 C of the oat and milk mixture to each ramekin. Cook at 350 degrees for about 25 minutes or until a knife in the center comes out clean.--Makes 4 servings of 1 ramekin each.--Enjoy!!Number of Servings: 4Recipe submitted by SparkPeople user RUMBAMEL.
