Preheat oven to 350 degrees.Prepare an 8"x8" baking dish by applying cooking spray; set aside.Toast wheat germ, by placing in a un-oiled, non-stick pan on the stove using low heat. Stir until lightly toasted. It will take less than 5 minutes. Be careful to not let it burn. Set it aside to allow it to cool.In a medium bowl, place the peeled, cored, sliced apples, 1 tsp. coconut sugar, 1/2 tsp. turbinado, and 1/4 tsp. cinnamon. Stir to coat apples. Once apples are coated, place them evenly in the prepared baking dish.In the same bowl used for the apple mixture, place oats, toasted wheat germ, 1 Tbls light brown sugar, 1/2 tsp cinnamon, coconut oil, and walnuts. With a spoon, or your hands, mix until the oil and all ingredients are well blended.
