Here is how you make Spiced Caramelized Apples:

In a saute' pan, heat oil and sugar, stirring continuously until sugar melts. When sugar has melted, add apples and spices, stir to coat apples. Add 3 tbsp. water and stir occasionally to loosen apples. Cook apples until they are lightly browned on all sides. While apples are cooking, place cottage cheese in four serving dishes. Remove apples from pan and add on top of cottage cheese. Add 2 tbsp. water to the saute' pan. Cook liquid until it forms a thin sauce.
