1 cup all purpose flour
1 cup cake flour
1 3.4 oz package of instant vanilla pudding mix (I used Great Value Brand regualr vanilla pudding mix)
1 tsp baking powder
1 Tbsp corn starch
1 tsp cinnamon
1 tsp nutmeg
.5 tsp salt
1 stick of room temp butter or margarine ( I used Blue Bonnet regular margarine)
.25 c light brown sugar, packed
.25 c granulated sugar
1.5 tsp vanilla extract
4 large eggs, whites only
.25 c maple syrup ( I used Golden Griddle sugar free low calorie syrup)
.25 c heavy whipping cream
.25 c water
5 strips of crispy cooked bacon, chopped ( I used Farmland hickory smoked bacon)

Here is how you make Mel's Maple French Toast and Bacon Cupcakes:

preheat oven to 325 F place liners in 14 muffin tin holes. mix both flours, pudding mix, baking powder, corn starch, cinnamon, nutmeg, and salt together in a bowl with a whisk.Cream butter and both sugars with a mixer on low speed until well combined. gradually add in the egg whites and vanilla. continue to mix until light and fluffy. add flour mixture gradually alternating between adding the dry ingredients, syrup, and cream and water ( or you could just use .5 c half and half- I just used the cream and water because that what I had on hand.) continue to mix until all ingredients are combined. Dont over mix. fold in chopped bacon. fill cups 3/4 with batter. Bake 30 mins at 325F or until tooth pick inserted in the middle of the cupcakes come out clean.
