Here is how you make No-Bake Elvis Bars:

line an 8-inch square pan with parchment paper.FOR CRUSTadd almonds to food processor and process until a fine crumb forms. Slightly larger than sand. Add 2 Tbsp coconut oil, 2 Tbsp brown rice syrup, 1 Tbsp peanut butter. Process ingredients until mixture comes together. Press mixture into bottom of Pan. Place in freezer while you prepare middle layer.FOR MIDDLE LAYERRinse the processor bowl and then add the bananas, 1/4 cup coconut oil, 2 Tbsp Peanut butter, 1tsp Pure Vanilla Extract. Process until smooth. Remove the crust from the freezer and pour the middle layer over crust, smooth out. Return to freezer for at least 1 - 1-1/2 hours to set, until the middle layer is firm to the touch.FOR TOPPINGwhen middle is completely solid, prepare the topping. In a small saucepan, heat the chocolate and the remaining coconut oil on the lowest heat, stirring to combine. When half the chips have melted remove from heat and stir until completely melted. Remove the bars from the freezer and lift the slab out of the pan using the parchment paper. Cut slab into 16 bars and separate leaving room between the bars on a parchment paper lined dish. Drizzle melted chocolate over bars. Return the bars to the freezer until the chocolate is firm and bars are solid.Enjoy the bars straight from the freezer. They melt very quickly, so don't leave them out for more than a couple minutes. Wrap leftovers and store in freezer.
