Preheat oven to 350F. In a large bowl cream together the sugar and butter. Add eggs one at a time beating well after each addition. Beat in bashed bananas and vanilla and continue beating until mixture is smooth. In a measuring cup stir baking soda into the buttermilk (or 1% Milk with lemon juice - as calculated in the nutritional information) and add it to the band mixture along with the flour and chopped nuts (1 cup walnuts optional - not calculated in the nutritional information). Stir the batter until it is just combined. Pour batter into 4 small loaf pans. Cook for 42 minutes.
