3/4 cup sugar (I use my 3/4 cup measuring cup and fill it half with regular sugar and half with non-packed brown sugar)
1 cup mashed ripe bananas (the more ripe the better!)
1/3 cup skim milk
1 tbsp vegetable oil (or canola...its all I had!)
1 tbsp vanilla extract
1 3/4 cup flour (I used whole wheat, my husband couldnt even tell!)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
* Though the recipe did not call for it, I added dashes of cinnamon, nutmeg, and allspice for some extra flavor and it came out dynamite! I put in about 3 tsp cinnamon, 2 tsp nutmeg and 1 tsp allspice (approx...I didnt measure)

-Pre-heat oven to 325 degrees-Grease a bread pan and dust with flour-Beat eggs, sugar, cinnamon, nutmeg, and allspice together until well blended, about 5 minutes-mix in mashed bananas, vanilla, oil, and milk-in another bowl, combine flour, baking soda, baking powder, and salt (no need to mix)-slowly add the dry mixture (flour) to the wet mixture (banana/sugar) while mixing constantly-continue to mix until well blended and a nice smooth batter is made-pour into a single 9x5 bread pan and bake for about 1 hour (mine needed an additional 15 minutes)Makes one loaf that serves about 14-15 servings...DELISH!Number of Servings: 15Recipe submitted by SparkPeople user DEEDS1313.
