If using a power mixer, use the lowest setting. Mix until the batter is thick but still pourable. It should be thicker than a cake batter but not a heavy lump in the bottom of the bowl.Cooks in a bread pan (greased or nonstick) or in a round 8" cake pan (greased or nonstick).Bake for at least 40 minutes in a bread pan and at least 30 min in a cake pan, depending on your altitude and oven. A butter knife through the middle should come out cleanly when done. Be careful not to overbake as it will dry out because of the flax.
