My grandma Lillie gave me this recipe for Banana Bread and it's so easy and one of the best tasting I've ever had. This can be made with butter or margarine -although I made it with Margarine-butter will work too -it just changes the calorie count/nutritional value a little... and Buttermilk can be substituted for the "soured milk" made with the 2% milk and 2 tsps of white vinegar. Nuts can be added too.

3/4 cup (1 1/2 sticks) Margarine - or butter could be substituted too
2 cups mashed ripe bananas (that's usually 3-4 averaged-sized bananas)
2 large eggs
1 tsp Vanilla Extract
2 cups flour
1 tsp baking soda
1 tsp salt
1/2 cup 2% milk - "soured" with 2 tsp white vinegar (Buttermilk is on my original recipe from Grandma -but since I usually don't have buttermilk in the house -she told me "soured" milk using the vinegar works too)
(*nuts can be added too - but they are not figured into the nutritional value or calorie count)

Here is how you make Grandma Lillie's Banana Bread:

Heat oven to 350-degrees and spray/grease the loaf panCream 3/4 cup margarine (or butter)Add 1-1/2 cups granulated sugar 2 cups mashe ripe bananas (3-4 bananas usually) 2 eggs 1 tsp vanillaSift together 2 cups flour with 1 tsp baking soda and 1 tsp salt.(*Prepare the "soured" milk with the 1/2 cup milk and 2 tsp white vinegar - should be done probably right after starting to heat the oven and greasing the pan - unless you're using Buttermilk instead)Alternately add the flour and "soured" milk into the banana mixture.Pour into the greased loaf pan ad bake for 1-1/2 hours at 350-degreesRemove from pan after cools slightly.Number of Servings: 14Recipe submitted by SparkPeople user DONNAGRACE1164.
