Here is how you make Banana Pineapple Crumb Cake:

Heat oven to 350 deg. F. Place rectangles of parchment paper in bottom of two 9 inch bread pans. Spray bottom & sides of pan with Pam.Prepare crumb topping by combining all ingredients except coconut in a medium bowl and with a pastry blender cut butter until mixture is coarse crumbs. Add coconut and set aside.In a large bowl, blend together flour, baking soda, salt, sugar & cinnamon. Add the eggs & oil. Stir until dry ingredients are just moistened. Stir in bananas, pineapple & vanilla. Evenly divide batter between the two 9-inch bread pans. Sprinkle with crumb topping. Bake at 350 deg F for about 40-50 minutes or until toothpick inserted into center of cake comes out clean. Cool on wire rack for 15 minutes.
