1 cup Granulated White Sugar,

1 tsp Baking Soda

3 Bananas, very ripe
About 6 Strawberries
1/3 cup Extra Virgin Olive Oil (or Vegetable Oil for richer flavor)
1 egg
1 cup chocolate chips, milk chocolate or semi-sweet


How Do I Make Amber's Double Chocolate Strawberry Banana Muffins?

Here is how you make Amber's Double Chocolate Strawberry Banana Muffins:

Preheat the oven to 350 degrees.In a small bowl, mash the bananas and strawberries together. You should have about 1/2 cup. Add the oil and the egg, mix together. In a large bowl, put in all dry ingredients. Mix together evenly (or sift if desired - I'm too lazy to sift and they come out fine!). Add the wet ingredients to the dry, and stir until moistened, do not over-stir. Once combined, add chocolate chips. Pour mix into muffin pan (I spray mine with Pam and they come out beautifully, but you can use liners if you wish) and fill each cup 3/4 full. Bake for 10-12 minutes, checking with a toothpick to make sure they are done. If the toothpick comes out dry, they are done! Don't overcook!Variation: Mini Muffins are FABULOUS with this recipe!! They are more moist, the chocolate seems more condensed, and they are bite-size treats that are perfect for small children or adults!Please comment and let me know what adjustments you made to this recipe - I am thinking of tweaking it myself and using applesauce instead of oil or 1/2 and 1/2, and the flour amounts can be adjusted to however you like it. I originally made it with all white flour and they were very sweet and good, but the whole wheat flour gives it a bit of a healthy and heartier taste.
