I have done my best to modify my mother's banana chocolate chip muffin recipe to be more diet friendly. You could probably do better by reducing the oil or replacing it with yogurt or applesauce. Also, some folks can tolerate more xylitol than our family, so all of the sugar could be replaced with that or another non-caloric sweetener. You could also reduce or leave out the chips or nuts to further save calories. But, I wanted to try to retain the flavor and texture of Mom's muffins.

Here is how you make Mom's Banana Chocolate Chip Muffins:

Blend bananas, oil, sugar, xylitol, and eggs in a stand mixer or mix by hand until smooth. Combine dry ingredients in another bowl and add a little at a time to the wet ingredients just mixing slowly just until combined. Blend in vanilla. Stir in nuts and chocolate chips. Spray muffin tins. Divide batter into 19 tins. Bake 350 degrees for 18-20 min. or until done. Let cool in pan for 5 min., then transfer to cooling racks.
