1/2 c. Splenda Brown Sugar Blend
1/3 c. Splenda
1/2 tbs. vanilla
1/2 tbs. rum
2 large bananas
1 1/2 c. whole wheat flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 c. sweetened flaked coconut


For topping:
1/3 c. powdered sugar (I made mine with Splenda in the food processor)
16 almonds, chopped



How Do I Make Banana Coconut Bars?

Here is how you make Banana Coconut Bars:

Preheat oven to 350 degrees. Spray a 13x9 in. baking pan. Makes 12 bars.Mash or blend tofu until smooth. Add brown sugar blend and 1/3 c. of the Splenda and blend with a fork until creamy. Add vanilla, rum, and mashed banana, stir well. Sift flour, baking powder, and salt in a large bowl. Stir in coconut. Make a well in the middle and pour in banana mixture. Stir only enough to moisten the flour (over stirring makes them tough.) Pour into baking pan and bake for 25-30 minutes.Remove and while warm, cut into 12 bars.
