In a zip-lock bag, combine sugar and cinnamon. Shake to mix well. Set aside. In the preheated pan, lightly cook the whole banana for approx 1 minute (turning to heat all sides). Remove from pan and pat with paper towel.Add 2 TB of any light-colored oil (ie: canola) to pan and tilt to coat. Allow oil to preheat until small ripples form.While oil is heating, wrap the Tortilla around the Banana and set aside. On a small serving plate, place 2 scoops of Vanilla Frozen Yogurt to one side.
