Here is how you make Sugar Free (mostly) Pumpkin Banana Bread or Muffins:

Pre-Heat Oven to 350 degrees. Combine flour through Pumpkin Pie spice in a large bowl and make a well in the center of the mixture...set aside. Combine Splenda and all the wet ingrediants in a medium bowl until smooth, add to the dry ingrediants. Stir until moist. Spoon batter 2 9x5 loaf pans coated w/cooking spray. Makes 2 pans. Or make muffins...I like better...either a heaping tblspn for the bigger muffin pans or about 1/2 tablespoon for the smaller muffing pans. You get about 16 slices from the bread. Please note cooking time is for bread. Muffins take much less time! Done when toothpick comes clean.It was ok. Plan to play with the recipe more.
