Prepare 12 muffins cups with liner or spray with PAM. preheat oven to 350 degrees F.In large bowl, mix together butter and sugar with mixer until fluffy and light. add egg, yogurt, vanilla and bananas and blend completely, scraping down bowl once.Add flour, baking powder, baking soda, and salt and mix until just coming together. Add walnuts and chocolate chips and blend thoroughly. Mound high into the muffin cups and sprinkle with more toasted walnuts, if desired. Bake for 25 minutes or until a pick comes out fairly clean.
