2 c. milk
2 T. cornstarch
3/4 c. sugar
1 egg
2 tsp. vanilla extract (Mexican Vanilla recommended)
2 T. butter
3 bananas
1 box (almost) vanilla wafers


How Do I Make Microwave Banana Pudding?

Here is how you make Microwave Banana Pudding:

In large microwave safe bowl, add milk. Combine cornstarch and sugar in a small bowl and add to the milk, stirring well.Microwave on high for 4 minutes, stirring after every 1 minute.Beat the egg and gradually some of the hot milk mixture to temper the egg. Add egg mixture to milk and microwave on medium stirring after every 1 minute until mixture is thick. When desired thickness is reached, add butter and vanilla and stir well until butter melts. Put a layer of vanilla wafers and bananas in an oblong dish and add half of the pudding mixture. Repeat with another layer. Sprinkle crushed vanilla wafers on top and chill for at least 2 hours before serving.
