1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
14 oz can white kidney,navy, or cannellini beans
1/4 cup softened margarine
1 cup packed brown sugar
1 large egg
1 tsp vanilla
1/2 cup chocolate chips
1/2 cup raisins or craisins
1/4 cup chopped walnuts
2 tbsp ground flaxseed


How Do I Make Breakfast Bean Cookies?

Here is how you make Breakfast Bean Cookies:

Preheat oven to 325 degrees. Place oats in the bowl of a food processor and pulse until resembles coarse flour. Add flour baking soda baking powder cinnamon and salt and whiz until combined. Transfer to bowl. Put beans into the food processor and pulse until smooth scraping sides of bowl. add butter and process until well blended. add sugar, egg, and vanilla and pulse smooth. add bean mixture to oats and stir by hand until smooth. add chips, nuts, raisins and flax. combine until just blended. drop by large spoonfuls of dough onto cookie sheet that has been sprayed by non stick spray and flatten with hand. bake for 14-16 minutes until pale gold around edges but still soft in middle. transfer to wire rack.Number of Servings: 24Recipe submitted by SparkPeople user CONFOUNDIT.
