2 cups part skim Ricotta Cheese
2 8oz pkgs Fat Free Cream Cheese
1 cup Granulated Sugar
1 tsp grated Lemon Peel
2 tsp Pure Vanilla Extract
pinch of salt
4 large Eggs

To top:
4 tbsp Powdered Sugar

Red Berry topping:
2pkgs strawberries, thawed and sliced
1 pkg blackberries, thawed
2 pint raspberries
2 tbsp granulated sugar
2 tbsp lemon juice


How Do I Make Love-ly Red Berry Cheesecake?

Here is how you make Love-ly Red Berry Cheesecake:

Set oven to 350 degrees.Prepare pan with a decent coating of pan for baking spray (or any vegetable oil cooking spray and a light sprinkling of flour)Blend both cheeses, sugar, lemon peel and vanilla in a mixing bowl until smooth. Add eggs one at a time, mixing thoroughly after each one. Pour batter into prepared pan and bake at 350 for about 1 hour, or until center of cake barely moves when touched.Remove from oven and run a knife around the outside of cake. Let cool, then sprinkle with powdered sugar.To prepare topping, combine berries, juice and sugar. Mix to coat all thoroughly. Let stand at least 5 minutes, longer for more juicy topping.To serve, slice cheesecake into thin wedges (I usually try to get at least 16 servings out of it) and garnish with about 1/4 cup berry mixture.Makes approx. 16 servings of cake and topping, with some topping leftover.Number of Servings: 16Recipe submitted by SparkPeople user U_NIQUE.
