A yummy decadent tasting dessert that is very low fat and relatively low calorie! The recipe my mom gave me called for cranberries (1 bag) instead of the strawberries, but I didn't have any. It was still delicious, even though the strawberries are obviously higher in calories. I think you can probably use pretty much any berries you want. Also her recipe called for 1/2 cup chopped almonds in the crumble mix, and only 1/2 cup oatmeal, but I used 3/4 cup oatmeal and no nuts (which is what the calorie count is based on). Use what you want!

Strawberries, fresh, 16 oz
Splenda, 1/2 cup
Tapioca Starch, 1 tbsp
Margarine 2 tbsp
Whole Wheat Flour, 0.5 cup
Brown Sugar, .5 cup, packed
Rolled Oats, 1/2 to 3/4 cup
Chopped Almonds, 1/2 cup (optional)
2 lemons, juice and zest
vanilla extract, 1 tsp

Here is how you make Triple Berry Crumble:

Mix all berries together. Halve or quarter the strawberries, depending on size.Mix 1/2 cup Splenda with 1 tbsp tapioca starch.Stir the sugar/starch mix into the berries to coat all. Then add the juice and zest of two lemons, and stir.Pour into a baking dish (I used 9" square).Make the crumble:Cut 2 tbsp COLD margarine into 1/2 cup flour.Add 1/2 cup brown sugar and cut into mixture.Add rolled oats and chopped almonds (if using) and cut into mixture. Add 1 tsp vanilla.Sprinkle over top of berry mixture and bake at 375 F for about 45 minutes, or until the juices are bubbling out and the top is brown.Serving Size:?Makes 8 servings.
