- 1.5 c Splenda
- 2 c - Blend of White & Ultragrain flours - Eagle Mills flour
- 4 tsp baking powder
- 1/4 tsp ground cinnamon
- 2 tsp vanilla extract
- 1.5 c skim milk

Here is how you make Mixed Berry Splenda Cobbler:

1. In a large measuring cup, put 1 cup whole/sliced berries in cup, pour milk to 1.5 c line, add vanilla; blend/mash until smooth.2. Strain milk mixture to remove seeds/chunks of mashed berries. Now you will have a pink/berry flavored crust for the cobbler.3. Melt Smart Balance in microwave (low so it doesn't boil/explode!).4. In large bowl, combine flour, sugar, baking powder, salt (optional) and cinnamon.5. Stir in milk/berry mixture until combined.6. Pour batter over butter in 9 x 13 glass Pyrex dish - gently spread the batter out to the edges.7. Top with plenty of sliced berries to cover the entire cobbler batter - I used 8.5 cups fresh berries.8. Bake at 375 for 45-55 minutes - watch to ensure the middle is not too watery/solidification & browning of the cobbler/flour.9. Best warm with Low Fat vanilla ice cream on top!
