Preheat oven to 400 and lightly spray muffin tin with cooking spray. Unroll crusts and use a 3.5 or 4" round cutter (or cup) to cut 6 circles from each crust. Press circles into 12 muffin tins, pleating to fit. Mix sugar and corn starch in a medium bowl; add berries and lemon juice. Divide evenly between muffin tins. Bake at 400 for 20 minutes. Cool on wire rack for 5 minutes, then carefully remove tartlets and cool completely on wire rack.
