3 large eggs

How Do I Make Corby Kommer's Biscotti?

Here is how you make Corby Kommer's Biscotti:

Place racks in oven so it is divided into thirds. Turn to 350 degrees. Spead almonds on baking sheet., toast almonds in 350 degree oven for 8 - 10 minutes. You can smell the almonds; the center will be lightly brown when done. Thoroughly mix dry ingredients. Beat eggs and vanilla in large bowl, add mixed dry ingredients, stir with a wooden, or very heavy spoon, as dough is heavy; light spoons will bend. Stir until well blended. Add almonds, stir, let dough rest 10 minutes. With well floured hands, turn out onto floured surface, fold and knead 5 - 6 times to distribute almonds. Divide dough into 3 portions. Roll each portion into a 12 - 14 inch long rope., about 1 inch wide. Place at least 4"apart on 2 baking sheets which are covered with parchment paper or aluminum foil (shiny side up) Bake at 300 degrees for 50 minutes, reversing sheets after 25 minutes. They will spread from side to side, but not rise very much. Remove from oven, cool 5 minutes - or until cool enough to handle. place baked ropes on a cutting board. Using a thin, serrated knife, slice bars on the diagonal, about 1/2 inch thick. place cookies, cut side up, on baking sheets, return to oven for 20 - 50 minutes, depending upon how brown you want them to be. If they are the color you want, but are not yet hard, turn off the oven, leave them in the turned off oven with door slightly ajar. They will continue to dry out, without becoming darker.
