Vanilla 7 Maraschino cherries, halved (optional) 14 small mint sprigs (optional) How Do I Make Biscuit Tortoni?Here is how you make Biscuit Tortoni: This makes 14 generous servings. It takes about 30 minutes to prepare, but needs to freeze for at least 2 hours and up to 2 months.Put Egg Whites into a small bowl and bring to room temp. Mix Water and sugar in a 1 quart sauce pan and stir over low heat to dissolve. boil uncovered, and WITHOUT stirring to 236 degrees F on a candy thermometer, usually less than 5 minutes.Meanwhile, at high speed, beat egg whites with salt to foamy peaks. When sugar mixture has reached temperature, pour hot syrup in a thin stream over the egg whites, beating constantly to stiff peaks. Put into fridge, covered, for 30 minutes.Toast almonds in a 350 oven for about 8 minutes, watching closely so as not to burn. Run through a grinder or chop finely and put into a small bowl, add 1 1/2 tsp. Almond Extract, set aside.In medium, chilled bowl, beat cream with remaining almond extract and the vanilla, until quite stiff. Blend in egg white mixture in an over/under motion until well blended.Spoon into paper lined cup cake tin or ramekins, sprinkle with almond mixture. Freeze until firm, then cover with foil or place in freezer bag. Remove from freezer 10 minutes before serving.
