1.75 tsp baking soda
.5 tsp salt
.75 C sugar
1 egg
1 tsp pure vanilla extract
.50 C 2% milk
5 C fresh organic blueberries (I have also used blackberries, raspberries or cranberries)
2 tsp lemon zest
cooking spray

Here is how you make Blueberry Buckle:

preheat over to 350 degrees F. spray 10" pan with cooking spray and coat with flour.Sift together flours, baking soda and salt; set aside. in mixing bowl, mix oil and sugar on med speed until mixture becomes light and viscous, about 2 minutes. reduce speed to low; add egg and vanilla. then alternate adding flour mixture and milk to bowl. once all mixed, fold in berries and lemon zest. pour batter into prepared pan. bake for 45 minutes or until cake tester comes out batter-free. can sprinkle a streusel topping on if desired. remove cake from oven and let cool for 15-20 minutes. serves 10 Number of Servings: 10Recipe submitted by SparkPeople user COALBEANER.
