Preheat oven to 375 degrees. Spray 2 qt baking dish with nostick spray.Toss fruits, lime juice and zest together in a large bowl. Sprinkle with 1/2 c sugar and the cornstarch. Mix gently and pour into baking dish.In separate bowl, combine cracker crumbs, remaining sugar, cinnamon, ginger and oil.Sprinkle over fruit and bake 30-35 minutes, covering with foil if top browns too quickly.
