This is my mother's creation and we always just called it "blueberry stuff". It makes a wonderful dessert for a summer dinner party, but is just as good in the morning for breakfast! What Are The Ingredients For Laura's Blueberry Stuff Recipe?The ingredients for Laura's Blueberry Stuff are: 2 cups fresh blueberries, washed and drained1/4 cup sugar, separated 1 1/4 cups Heart Healthy Bisquick mix 1 tbsp. butter, melted 1/3 cup milk 1 tsp baking powder 1 tsp vanilla extract 1 Tbsp minute tapioca How Do I Make Laura's Blueberry Stuff?Here is how you make Laura's Blueberry Stuff: Preheat oven to 350 degrees.Heat the blueberries in the microwave or in a pot on the stove until they burst and are bubbly. It is important to have the blueberry part very hot before baking so the biscuit part cooks on the bottom. Add 2-3 Tbsp of sugar to the blueberries, to taste. Also add the 1 Tbsp of tapioca to the blueberrries. This will help thicken them.In a small bowl, mix the bisquick, 2 Tbsp sugar, and baking powder. Add the butter, milk and vanilla and mix until smooth. Let this sit for a minute to start rising.Re-heat the blueberries to bubbly again and put in an oven safe casserole dish (1.5 quart works well). Spoon 6 globs of the bisquick mixture on the top of the blueberries. Bake at 350 degrees for 20-25 minutes, or until the tops are golden brown. Allow to sit out of the oven for a few more minutes. This assures that the bottoms have cooked properly, and lets the blueberry mixture cool slightly.
