1/2 cup lite almond breeze soy milk
1 cup All-Bran® Original
1/2 cup light butter, softened
1 1/2 cups heat stable sugar sub.
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon cloves
3 eggs egg substitute
2 cups whole-wheat flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Here is how you make All-Bran Applesauce Cupcakes:

DIRECTIONS1. In medium mixing bowl, combine applesauce, milk and KELLOGG'S ALL-BRANcereal. Set aside.2. In large bowl, beat together margarine, sugar sub., cinnamon, all-spice and cloves.Beat in eggs, one at a time, beating well after each addition.3. Stir together flour, baking powder, soda and salt. Add alternately with cerealmixture to margarine mixture, beating well after each addition. Spoon into 2 1/2-inchmuffin-pan cups coated with cooking spary or lined with paper cups. 4. Bake at 350° F oven 20 minutes or until wooded pick inserted in cupcake comesout clean. Mix some extra sugar sub. with some cinnamon and sprinkle on top. Cool 10 minutes, remove from pan and cool completely. * for additional fiber or fun you can add in lots of good for you stuff- raisins, shredded zuccini, apple chunks, any kind of dessert chips, squash... trial and error. Use your imagination. * try making a paste with sugar free pancake syrup and cinnamon/sugar sub mix and using that as a frosting.
