Preheat oven @ 350 degreesSift flour, baking powder, salt and nutmeg in a large bowl. Stir in lemon peel, chopped apples and nuts. In a seperate bowl, beat eggs. Melt butter and add honey. Take butter mixture off of heat and add soy milk. Add wet ingredients to dry mixture, stir lightly until flour is moistioned and mixed well. Turn into well greased loaf pan.Strussel Toppingcut together until it resembles corn meal. Sprinkle on top of bread mixture. Bake for about 1 hour.
