Combine oil,applesauce,sugar,flour,oatmeal,baking soda, baking powder,cinnamon, salt and eggs in a large bowl. Gently stir in carrots, raisins, pineapples and walnuts. Pour into a greased and floured (cooking spray can be used) 9x5x3 inch loaf pan (this makes 2 pans). Bake in a 350 degree oven for 50-60 minutes.Remove from oven and let cool for 5 minutes before removing from pan. Remove from pan and allow to cool on wire rack.
