1/2 lb butter or margarine ( I used margarine)
4 eggs
1 teaspoon vanilla extract
3/4 pound grated coconut
1-1/2 lbs flour
4 teaspoons baking powder
3/4 cup coconut water, saved when breaking open coconut. (Also called coconut milk)
1/2 raisins


How Do I Make Bajan Coconut Bread?

Here is how you make Bajan Coconut Bread:

Mix sugar and butter until fluffy. Add the eggs, vanilla, coconut, flour and baking powder, mixing all the while. Lastly, mix in water and raisins. Put in a greased loaf pan and sprinkle sugar on top (optional). Bake in preheated oven for about 45 minutes at 325 until top is golden brown.
