2 cups thinly sliced carrots; 1 cup 1% milk; 1 tsp. white vinegar; 2 large eggs; 1/4 cup unsweetened applesauce; 1/4 cup canola oil; 1/3 cup honey; 2 cups wholewheat flour; 1 cup potato flour; 2 tsp. baking soda; 1 tsp. baking powder; 1/2 tsp. ground ginger; 1/2 tsp. ground nutmeg; 1 cup chopped dried apricots; 1/3 cup chopped dates; 1/4 cup chopped almonds.

Here is how you make Fruit and Nut Bread:

Preheat oven to 350* F. Place carrots in 1 quart pan. Add cold water to cover, bring to a boil and cook till tender. Drain and mash - measure out 1 1/4 cups and place in large bowl. Add vinegar to milk and let sour, then add to carrots along with eggs, applesauce, canola oil, and honey. Mix well. Sift dry ingredients together and stir into carrot mixture. Fold in the fruit and nuts. Spray 2 loaf pans ( 8 1/2 x 4 1/2 ") . Divide dough between the 2 pans. Bake for 45 -60 minutes or till toothpick inserted in center comes out clean.
